I am trying to animate a character swinging a large weapon while using two hands. I want to parent the sword/battle axe/mallet to both of the hands so that if I move the object the arms move in unison. Also, I need to have the shoulders stay in place. Is this possible? If so, how?

What you're looking for requires IK animation with constraints, this is not possible in Spine. We might add it in the future though.
You can relatively easy get around it with regular FK animation. Start by keying the extreme poses, then insert the in-between keys to make it look like the hands are attached to the handle of your weapon.
