GIFs are limited to 256 colors. Not good for gradients.
Video is subject to compression from the codec (agressive compression usually doesn't play nice with gradients).
What you could do is export as PNG sequence and import them in Photoshop or something.
The same limitations of the file formats will apply but you may be able to do some extra processing there.
